Cooking experiment #3

Attempted to make cupcakes with Raspberry Cream Cheese frosting.  I used lemon instead of vanilla cupcakes and strawberry instead of raspberry for the frosting.  Turned out pretty well I think.  The only problem I had was that in the frosting the cream cheese flavor seemed to over take the strawberry flavor.  Also, the recipe has you put in wayyyyyyyyyy too much sugar then is necessary.

Lemon Cupcakes with Strawberry Cream Cheese Frosting

1 package lemon cupcake mix

1 package 8 oz instant lemon pudding mix

Follow the cupcake mix directions, but add the pudding mix powder and lessen the amount of water.  Stir for about 10 min.

Strawberry Cream Cheese Frosting

1 stick butter, room temperature  (could definitely use less of this too!)
1 block (8oz) cream cheese, room temperature
Sift powdered sugar over creamed mixture and beat on medium low until the sugar is all incorporated
Add jam and continue beating.
Make sure you don’t overbeat or else the frosting will become soupy.
